There are many ways to serve this Black Bean Salad. You can either serve it on fresh greens with extra lime juice or pile it on cheese nachos to make them more redeeming. You can use it as a filling for any burrito or quesadillas or devour in its best form.

*INGREDIENTS:

• 4 ½ cups cooked black beans.
• 1 cup of corn
• 1 orange, yellow or red bell pepper (chopped)
• 1 cup quartered cherry tomatoes/ regular tomatoes. (chop the regular tomatoes a bit smaller than a quarter.)
• 1 cup chopped red onion/ regular onion.
• ½ cup finely chopped cilantro/ coriander. (about ½ bunch)
• 1 medium jalapeño, finely chopped/ 2tbsp finely chopped pickled jalapeño.
• ½ teaspoon lemon zest.
• 2 tablespoon lime juice. (about 1 lime)
• ¼ cup olive oil.
• ½ teaspoon chilli powder.
• ½ teaspoon ground cumin
• ½ teaspoon salt to taste

*STEPS:

• Heat a pan with some water and boil the black beans.

  

• Chop the cherry tomatoes or regular into quartered pieces. Chop the regular tomatoes smaller than a quarter, which will make it easy to eat.

• Cut the onions and bell pepper into small pieces.

  

• Mince the jalapeños.
• Grate the skin of the lemon to obtain the zest.
• Take a big bowl and combine the boiled beans, chopped tomatoes & onions, minced jalapeño, and bell pepper.
• Squeeze in some lime juice and drizzle with olive oil.
• Give this mixture a rough stir.

• Add chilli flakes, salt, and pepper and give it a good stir.

  

• Right before serving, add the fresh chopped cilantro.

• You can also use canned corn if fresh corn is not available. Just make sure you drain out the water before you use it.
