Cauliflower-squash fritters.

Cauliflower is an annual plant that reproduces by seed. Typically, the head is what we eat- the edible white flesh sometimes called “curd.” Its head is composed of a white inflorescence meristem, which resembles those in broccoli, which differs in having flower buds as the edible portion. Imagine a lazy rainy day with a mood of chilling and having some delicious piece of snack. The first thought that comes to our mind will always be frittered. Well, the taste of it goes even better when we take cauliflower. Now, we don’t have to go to any stall to have the feeling of it. Let’s see how to make some fantastic cauliflower fritters from our home.

*Ingredients:

-1 Cauliflower and ½ butternut squash- Well, the prominent element in making it would be some fresh cauliflower and ½ butternut squash into cubes.

-1 tsp turmeric and 1 tsp ground cumin to add flavor to it.

-A small bunch of coriander. 100g flour and 150g yogurt to make the batter even thicker. One crushed garlic clove and 75g soft feta.

-2 tbsp finely chopped mint and 1 tbsp of oil.

*Steps on how to make Cauliflower-squash fritters:

-Let’s begin with heating the oven at 180C. Now toss the cauliflower and squash in oil and spread it out on a large oven tray. Then roast it for around 25 minutes.

-Now put the flour in a bowl and gradually stir in 125-150 ml water to thicken the batter.

-Don’t forget to add some turmeric and cumin and shake it.

-Break up the cauliflower and squash a little and mix it gently into the batter. Now add the coriander onto it.

-Now heat oil in a pan and drop two heaped tbsp of the mixture into the pan, spaced apart. Fry until the fritters are dark golden for about 2-3 minutes on each side.

-Finally, mix the yogurt with garlic, FetaFeta and mint and feta dip, some salad, and Pitta bread.

-Now your crispy fritters are ready. Don’t forget to enjoy the weather outside.
