Did you know paneer is also known as Cottage cheese? It is fresh curd cheese, mildly flavoured, and a saviour for all the vegetarians out there. Paneer is one of mom’s favourites because of the kids because it’s low in spice and high in protein. This dish is smooth and fluffy on the inside and crispy on the outside. It could be a starter or a main course, a party snack, or a tiffin idea. Paneer cutlet basically is an Indian cottage cheese-infused cutlet, filled with protein and all the vegetable nutrients that make it nutritious and tasty. While there are several ways to prepare this simple paneer cutlet, this recipe is a mixture of crumbled paneer and boiled, mashed vegetables. Indeed a treat and starter joy for vegetarian lovers. Paneer cutlet is easy to make a recipe that is your perfect satiating snack whenever hunger strikes in.
*INGREDIENTS:
- 2 sweet potatoes
- 1 carrot (grated)
- 1/2 cup green peas
- 1/2 cup paneer
- 2 teaspoon ginger garlic paste
- 1 teaspoon garam masala, chilli powder, turmeric powder, cumin powder & salt. (each)
- 1 tablespoon coriander leaves
- 1 cup maida
- 2 cup semolina (rawa)
*PROCESS:
- Start by heating a pan and simmering the water.
- Add in the sweet potatoes and boil them until soft. (You can use regular potatoes too)
- In another pan, heat some water, add in the green peas and cook them for about 4-5 minutes.
- Later go ahead and grate one carrot finely. (You can also add in some finely chopped onions.)
- Take the sweet potatoes out of the water and mash them until smooth.
- Once we are ready with our veggies, go on and crumble the paneer into small pieces.
Mix the mashed potatoes, carrot, green peas, paneer, coriander.
- Add 1 teaspoon garam masala, chilli powder, turmeric powder, cumin powder & salt to the potatoes and veggies mixture.
Mix all the spices and veggies together.
- Add maida to make it less sticky and hold its shape.
- Start forming small balls of the dough and flatten it out into cutlet shape.
- Once we have our cutlets shaped, roll them in semolina. Make sure you coat them from all sides. This coating will make them soft from the inside and crispy from the outside.
Heat a pan and shallow fry the cutlets.
- Serve them with some green mint chutney and enjoy the crispy treat.

*NOTES:
- Sweet potatoes take longer than regular potatoes to get soft. Make sure you poke a knife through and check the softness.
- Make sure the paneer is not too moist, or it might break the cutlet at the time of frying. Remove the excess moisture from the paneer.
- You can use homemade paneer instead of the store-bought.
- You can add in more veggies of your choice.
- Additionally, you can add in some cheese and enrich the taste.
- You can switch the semolina with some crushed oats or bread crumbs.
- If you do not want to fry the cutlets, you can bake them in an oven.
