Litchi Ice cream

Litchi trees are loaded with fruits this season. Every person aging from 5-50 loves a good ice cream. So what better way to combine two of our favourites than a good creamy ice-cream. The best part about making a homemade ice cream is that you can go all out with the flavours. Fruity ice creams are in vogue today, and this recipe is going to help you cruise the tidal wave. Perfect ratios of litchi, condensed milk and other ingredients give rise to a tasty creamy ice cream with a spiffy taste, while bits of chopped litchi tickle your taste buds in every spoonful. Enjoy the litchi ice cream and forget about the surrounding it in its sheer brilliance. Litchi contains great amount of dietary fibres, vitamins & antioxidants. The fruits is known for being high in Vitamin C & B- complex vitamins such as thiamine, niacin, & folates.

*INGREDIENTS:

Fresh Litchi - 10 (adjust as per your taste preference)

Whole Milk - 1 Cup

Sugar - 1 tsp (adjust according to the taste)

Heavy Cream - 3/4 Cup

Condensed Milk - 1/4 Cup

*STEPS:

1)First, peel the skin of the litchi, remove the seeds and chop them into small pieces.

2)Add the milk to a pan and bring it to a boil. Reduce the flame to low-medium and add the litchi pulp to the milk and let it simmer for 15 - 20 mins. By this time, the quantity of milk would have reduced to half and the litchi flavour would have infused into the milk. Turn off the flame and let the mixture sit till it reaches to room temperature.

3)Transfer the milk and litchi to a mixie/blender and blend it until smooth.

4)Optionally, use a fine mesh to filter out the remaining pulp. Transfer back the filtered milk into the mixie, add the condensed milk, heavy cream and give it 3 - 4 pulses until the mixture is nice and creamy.

5)Transfer the creamy mixture to a small bowl. Break all the bubbles on top using the back of a spoon and leave it in the freezer until set. I left it overnight in the freezer.

6) Scoop the ice cream, top it with some freshly chopped litchi and enjoy the treat.
